For a final project, food systems learners were tasked with coming up with a recipe that includes upcycled or recovered pre-consumer food. The assignment is intended to get the class thinking about opportunities to 1) reduce food waste at the sourceturn food production; 2) byproducts into value-added products for human consumption.
Although very interesting, I am not asking for ideas about recovering food waste (aka. diverting leftovers for human consumption). Options for ingredient byproducts include things like cereal grains, whey, cascara/coffee flour, offal, seafood waste, vegetable production waste, and so on. And, waste reduction is only one part of the equation.
